Hawthornberry Wine - Post Racking # 1

I tasted the hawthornberry wine as I was siphoning it out of the demijohn in which it completed its initial fermentation. It is the best we've made so far. We used a champagne yeast, and the extra quality makes a difference. It is a medium dry, orange-coloured wine, with a wonderful flavour. Next year we must make twice the quantity!

What do the haws contribute to the taste? That's what I'd like to know.

Hi Thirstiman,

That's a good question. When I tasted the berries during picking, they really didn't taste of much. However, the wine is great. So it might be the effect of the way it ferments.
